WIAW- Whole30 Day 21

I am a creature of habit.  Prepping my food and batch cooking for the work week just makes the most sense.  It saves our family money, and it saves me a heck of a lot of time in the kitchen.

I’m just buttering you up to see the same meal for this week’s What I ate Wednesday Tuesday. Still love me?  A little?  Let me know if you are getting bored with seeing what I eat in a day.  I’m not saying I’ll stop posting, but I would feel bad for you, just a little.

Breakfast

Egg Muffins – Surprise Surprise!  I put a little twist on these puppies and used ground turkey, instead of sausage.  To pull these together even faster, I used a prepackaged tub of pico de gallo.  That was it!  A spritz of coconut oil on the pans, a scoop of pico de gallo, a scoop of browned, ground turkey in each tin, and pour eggs that are all whisked from a blender to cover.  Bake at 350 degrees for 30-35 minutes and you have breakfast for 8 days.  They freeze and reheat well too!

I added a half of an avocado and some Cholula sauce for a spicier morning.

Veggie count: 1 from the three healthy scoops of pico de gallo and the avocado

Lunch

Shocking again, but I made PaleOMG’s Spaghetti Pizza Pie from last week.  I was craving it ever since I ate the last piece last week.  Me?  Craving spaghetti squash?  Who is this freak?!!

So I had a heaping plateful along with a honey crisp apple (mealy, bleck) and two cuties.

Veggie count: 2 from the squash, zucchini, mushrooms, olives, and onions that were hidden in there.

Snack:

Cashews and green tea – Not Pictured

Veggie count: Zip

Dinner

I was feeling a little lazy tonight and was going to eat leftovers but I’m so glad that I didn’t turn down my hub’s offer to cook me up some tri-tip.  He brought me home a cabbage and I played around with some ingredients and found my new, most favorite veggie in the whole entire world!

I almost ate the whole head of cabbage by myself.  I think I will be glad tomorrow that I did so?  It wasn’t the prettiest of all meals, but it was very filling.  There will be a recipe posted very soon!!

Veggie Count: 1 from the cabbage, unless a half of a cabbage counts as two?

Total veggie count:

My veggie serving for the day totaled 4 servings, but I could be off there, give or take a serving?  I should maybe figure out what amounts to a serving of veggies.  At the very least, they were present at every meal.  This has not always been the case.  

How many servings of veggies did you have today?

Fess up!  Have you ever gone a day without eating one serving of ?  Being sick doesn’t count.

  1. Maybe when I was a little kid I might have gone a full day without veggies, but once I hit 10 years old, my mom became very involved with making sure out family ate well (nutritiously) and those habits have stuck with me.

    For example, there are definitely certain things that I won’t ever eat before noon – no sweets, candies, pop, etc. Some of my friends will eat those foods before they have even had lunch and it just boggles my mind. I guess it just goes to show that habits formed when you are a kid really can stick with you!

    • Natasha, Hats off to your momma for instilling some good habits in you. My girls are coming around and are pretty healthy eaters – much better than I was at their age. I like the idea of no sweets before noon. You’re much more likely to continue eating healthy when you’re not sugar bombed. Thanks for stopping by!

  2. Oh those egg muffins look awesome!! Definitely going to need to try those out soon!! I do what I can to AT LEAST have 1 veggie as a snack during the day, and also some with lunch and dinner. Today right now I’m sitting at three but I’ll also have spinach and tomatoes with my dinner so 5! Woot!

  3. I definitely have some regular recipes that I come back to time and again. It’s fun to innovate but sometimes we definitely just need to eat something that’s guaranteed to be good, (and quick, and easy ;) )
